Food Festival Rediscovers PH Independence

During the Philippines’ 121st Independence Day, a festival full of our favorite Pinoy dishes took the spotlight. This does not just showcase the colorful culinary scene of the country, but as well as the stories behind every dish.

This annual event at Diamond Hotel is aims to develop the awareness of the people towards the country’s historical identity country through its prepared dishes.

“What makes this buffet special is that Chef Chris prepared a heritage and heirloom dishes and some are the favorites of our Filipino Heroes like Jose Rizal which is the Pansit Langlang. And some came from the provinces that are not popular but are really good,” said Ms. Melanie Pallorina, Public Relations Manager of Diamon Hotel Philippines.

The festival was opened by incoming Manila Mayor Isko Moreno, then followed by a talk led by Chef Christopher. He discussed his passion for exploring and reintroducing local and traditional dishes.

“I’ve been teaching history for 10 years, almost 10 years before I became an executive chef and I merged the two love(s) of my life, history and food,” mentions Chef Christopher Carangian, founder and president of Razer Chef Philippines and Punong Heneral of the Culinary Generals of the Philippines.

Through this event, both Chef Christopher and Diamond Hotel Philippines delivered the prominence of retracing our Philippine roots, be it through a culinary experience.

“First of all we need to promote our cuisine because our cuisine is also our culture, and it’s our identity. And we need to pass this knowledge to our children so they will not forget who they are and where they come from,” said Melanie.

The festival was full of an array of regional favorites and rediscovered delicacies.

The way to a man’s heart, to remind its love for its country, is indeed, through its stomach.
